This delightful exchange happened throughout the day, every day. For just twenty-five cents, neighbors enjoyed a taste of Puerto Rican tradition in our New Jersey community. All of us children under her care eagerly anticipated our daily treat. Furthermore, I especially cherished the coconut limber (limber de coco) and vibrant blue raspberry lemonade Kool-Aid varieties.
I found something magical about watching my Madrina prepare these treats. She never measured ingredients – she relied on second nature. In fact, she could whip up a batch of any limber flavor just by judging the measurements with her eyes and experience. How to Make Limber de Coco

Step 1: Gather Your Ingredients
Start by gathering all your ingredients: sweetened condensed milk, coconut milk, cream of coconut, vanilla extract, ground cinnamon, and coconut flakes. Having everything ready makes the process smooth and enjoyable.

Step 2: Prepare Your Cups
Set out your 5.5 oz cups with lids on a tray or baking sheet. This makes them easier to transport to the freezer once filled.

Step 3: Combine the Liquid Ingredients
Pour the sweetened condensed milk, coconut milk, cream of coconut, and evaporated milk into your blender. Make sure to scrape the sides of the cans to get all of that sweet goodness.

Step 4: Add Flavorings
Sprinkle in ground cinnamon to taste. A teaspoon is usually a good starting point, but you can adjust based on your preference. Add 1 teaspoon of vanilla extract for depth of flavor. Add coconut flakes as desired – about 1/4 cup gives a nice texture without overwhelming the smooth consistency.

Step 9: Freeze Until Solid
Allow the limbers to freeze completely, which usually takes about 4-6 hours, though overnight is best for the perfect consistency.
Step 10: Enjoy!
Once frozen, your limber de coco is ready to enjoy! The traditional Puerto Rican way to eat limber is to let it begin to melt slightly, then pop it up and flip it inside out in the cup. This technique, beloved throughout Puerto Rico and its diaspora communities, allows you to enjoy the perfect consistency as it begins to soften.

Equipment
- 1 blender
- 10 (5.5 oz) cups with lids
Ingredients
- 1 can (14 oz) sweetened condensed milk
- 1 can (13.5 oz) unsweetened coconut milk
- 1 can (15 oz) cream of coconut
- 1 can (12 oz) evaporated milk
- 1 tbsp vanilla extract
- ground cinnamon to taste
- shredded coconut to taste optional
Instructions
- Combine sweetened condensed milk, coconut milk, and cream of coconut in a blender.
- Add vanilla extract, cinnamon, and coconut flakes to taste.
- Blend until smooth (about 30-60 seconds).
- Taste and adjust flavors if needed.
- Pour into 5.5 oz cups, leaving space at the top.
- Secure lids and place in freezer.
- Freeze until solid (4-6 hours or overnight).
- To serve traditionally: let it begin to melt slightly, then pop it up and flip it inside out in the cup.
