Limber de Coco (Creamy Coconut Ice)

This creamy, traditional limber de coco brings the authentic taste of Puerto Rico to your freezer. A simple coconut frozen treat that's perfect for hot summer days and nostalgic gatherings.

Equipment

  • 10 (5.5 oz) cups with lids

Ingredients
  

  • 1 can (14 oz) sweetened condensed milk
  • 1 can (13.5 oz) unsweetened coconut milk
  • 1 can (15 oz) cream of coconut
  • 1 can (12 oz) evaporated milk
  • 1 tbsp vanilla extract
  • ground cinnamon to taste
  • shredded coconut to taste optional

Instructions
 

  • Combine sweetened condensed milk, coconut milk, and cream of coconut in a blender.
  • Add vanilla extract, cinnamon, and coconut flakes to taste.
  • Blend until smooth (about 30-60 seconds).
  • Taste and adjust flavors if needed.
  • Pour into 5.5 oz cups, leaving space at the top.
  • Secure lids and place in freezer.
  • Freeze until solid (4-6 hours or overnight).
  • To serve traditionally: let it begin to melt slightly, then pop it up and flip it inside out in the cup.

Notes

  • For a dairy-free version, use sweetened condensed coconut milk.
  • These limbers will keep in the freezer for up to 3 months.
  • If you prefer a stronger vanilla flavor, you can increase to 1½ teaspoons.
  • For additional sweetness, add 1-2 tablespoons of brown sugar, adjusting to your personal taste preference.
  • Serving variations: While the traditional Puerto Rican method is to flip the limber inside out in the cup, some people also enjoy eating it with a spoon directly from the cup or removing it completely to enjoy like a popsicle.
  • For a little umph, you can sprinkle additional toasted coconut flakes and/or a dash of cinnamon at the bottom of the cup and on top just before freezing.
