- 1 can (13.5 oz) unsweetened coconut milk
- 1 can (15 oz) cream of coconut
- 1 can (12 oz) evaporated milk
- 1 tbsp vanilla extract

Add vanilla extract, cinnamon, and coconut flakes to taste.
Blend until smooth (about 30-60 seconds).
Taste and adjust flavors if needed.
Pour into 5.5 oz cups, leaving space at the top.
Secure lids and place in freezer.
Freeze until solid (4-6 hours or overnight).
To serve traditionally: let it begin to melt slightly, then pop it up and flip it inside out in the cup.
- For a dairy-free version, use sweetened condensed coconut milk.
- These limbers will keep in the freezer for up to 3 months.
- If you prefer a stronger vanilla flavor, you can increase to 1½ teaspoons.
- For additional sweetness, add 1-2 tablespoons of brown sugar, adjusting to your personal taste preference.
- Serving variations: While the traditional Puerto Rican method is to flip the limber inside out in the cup, some people also enjoy eating it with a spoon directly from the cup or removing it completely to enjoy like a popsicle.
- For a little umph, you can sprinkle additional toasted coconut flakes and/or a dash of cinnamon at the bottom of the cup and on top just before freezing.
