Rinse and cut boneless pork loin into large bite-sized chunks. Place in a mixing bowl.
Add your seasonings directly to the pork: adobo, sazón, sofrito, minced garlic, and roasted garlic & herb seasoning.
Mix thoroughly until all pieces are evenly coated. Cover the bowl with saran wrap and refrigerate for at least 30 minutes to marinate.
Preheat your air fryer to 400°F. Arrange pork chunks in the basket without crowding. Cook in batches if needed.
Air fry for 17–20 minutes, flipping halfway through. For a juicier result, cook for 17 minutes. For a darker, crispier finish, go up to 20 minutes.

Prefer traditional frying? Heat oil to 350°F and fry pork chunks in batches for 5–7 minutes, until golden and crispy. Drain on paper towels before serving.
